Keto Garlic Parmesan Cauliflower (Print version)

Golden roasted cauliflower steaks topped with garlic-Parmesan crust, ideal for low-carb and vegetarian diets.

# Required ingredients:

→ Cauliflower

01 - 2 large heads cauliflower

→ Garlic Parmesan Topping

02 - 3 tablespoons olive oil
03 - 3 cloves garlic, finely minced
04 - 1/2 cup freshly grated Parmesan cheese
05 - 1/2 teaspoon smoked paprika
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon sea salt
08 - 1/4 teaspoon freshly ground black pepper
09 - 2 tablespoons chopped fresh parsley, optional for garnish

# How to make it:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Remove leaves and trim the stems of the cauliflower, keeping heads intact. Slice each head into 3-4 thick steaks approximately 3/4 inch thick. Reserve any loose florets for roasting alongside.
03 - Place cauliflower steaks and florets on the prepared baking sheet in a single layer.
04 - In a small bowl, combine olive oil and minced garlic. Brush both sides of cauliflower steaks thoroughly with the mixture.
05 - In another bowl, combine Parmesan cheese, smoked paprika, oregano, salt, and pepper. Sprinkle evenly over the tops of the cauliflower steaks.
06 - Roast in the oven for 25-30 minutes until the cauliflower is golden and edges are crisp, flipping steaks halfway through for even browning.
07 - Remove from oven and sprinkle with fresh parsley before serving if desired.

# Expert Advice:

01 -
  • Those crispy edges are genuinely addictive, nothing like steamed cauliflower you may have suffered through as a kid.
  • It fits effortlessly into keto, low-carb, or just regular weeknight cooking without feeling like you're restricting yourself.
  • The whole thing comes together in under 45 minutes, so you can have a restaurant-quality side on the table faster than ordering takeout.
02 -
  • Flipping the steaks halfway matters more than you'd think; the bottom side won't crisp without direct oven heat, leaving you with an uneven texture that feels like a missed opportunity.
  • Using freshly grated Parmesan changes everything because pre-shredded cheese has additives that prevent it from melting into that gorgeous, crusty layer that makes people pause mid-bite to ask what you did.
03 -
  • Don't skip the parchment paper because it prevents sticking and those golden bits on the bottom are too precious to sacrifice to cleanup frustration.
  • If your oven runs hot or cold, check the cauliflower around the 20 minute mark so you can adjust the timing and catch the steaks at their absolute peak crispness.
